Perla Bianca Prosecco DOC

PRODUCTION REGION: VENETO
The basic wine is obtained by an accurate white winemaking and stocked in stainless steel tanks at 15° C. The second fermentation is carried out in autoclave tanks at low temperature following the Charmat method by adding selected yeasts and sugar. Through a controlled procedure, the pressure is raised to 4 or 5 bar and to the desired content of residual sugar. Then the fermenting wine is cooled till to stop the fermentation process and the carbon dioxide starts to dissolve. At the end of this process the wine is filtered and bottled.
